Ingredients:

  • 440 grams / 2 cups Sabudana before soaking
  • 450 ml/ 2 cups water
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 3-4 curry leaves
  • tablespoon grated ginger
  • 2 green chillies, finely chopped
  • 2 medium-sized potatoes, peeled and cubed / 2 cups approx
  • cup roughly crushed roasted peanuts
  • Salt to taste, sendha namak for upvaas
  • 2 teaspoons Sugar
  • 1 tablespoon Lemon juice or to taste
  • Fistful of Chopped cilantro
  • A few roasted peanuts for garnish

Instructions:

  • Start by washing your Sabudana under cold tap water to remove starch and prevent sticking
  • Soak Sabudana in inch water of more than the sabudana level
  • Let it soak overnight or for at least 5-6 hours to allow Sabudana to fluff up
  • Take your heavy-bottom non-stick pan and add oil
  • Once the oil is hot enough, add in the cumin seeds, cubed potatoes and cook on a low flame
  • As the potatoes become tender, add in the curry leaves, ginger, chopped chillies, and cook for a minute more
  • Meanwhile, mix the soaked Sabudana with sugar, salt, peanuts and lemon juice
  • Once the Sabudana is ready, cook the khichdi mix until it becomes a bit translucent and well-coated.
